After you have made all of the changes you want to the labels, make sure you hit the lock icon on the left-hand of each label to prevent Plex from making its own changes. If Plex classifies any show as unmatched, either because you did not match it in the first place or because it became unmatched as changes were made to the filename or meta-data or because you failed to ensure the labels were locked, it will attempt to re-match the show during a scan. Second, after removing or aligning the title, you still need to ensure the show is matched. You can use freeware like mp3tag to do the process much faster for existing files in your library. You can leave it blank or change it to match the filename. So, every time Plex does a scan, it picks up on the title, rather than the filename, and proceeds to re-match the show.
